Will my girlfriend and I stay together?

My girlfriend and I had dated for 10 months. We love each other very much, but have recently broken up. We broke up because we wanted to live together, but we couldn't agree on our future together. She is a devout Christian, and while I identify as a Catholic, I am not as religious as she is. She also recently began a vegan diet, where my diet consists of meat, vegetables and dairy. When we first started dating, we were perfect for each other, we did not fight about anything. We had McDonalds, we didn't go to church, and had movie marathons on sleepovers. We still love spending time together even though we broke up. Now if we lived together, I would have no problem with her new lifestyle. I would support her vegan diet, I would respect Sabbath with her, even go to church and prayer meetings with her. But she on the other hand, refuses to accept my lifestyle, her old lifestyle. She says we would not have meat in the apartment and there would be no TV (I am a huge hockey fan). The biggest reason we can't be together anymore, is because I do not practice Christianity. She wants me to read the Bible and follow it strictly. I would love to have a family with her but she told me once that we could never have children together because she would not want to live in a torn household where she does not agree with my lifestyle and cannot respect it. I don't understand her at all. I don't know what I should do, I am madly in love with her. Should we stay apart and just be friends? Should I force myself to change? Should we stay together, and just enjoy the time we have until we have until we go our separate ways? Or should we stay together and just see what the future holds for us? Please help!
